Vanilla Muffins

Ingredients:

125 g of Self raising flour

125 g Butter

125 g Sugar

2 Eggs

2 tsp vanilla paste (10g) (alternatively vanilla extract or 1 pod can be used)

20 g Chocolate chips

Method:

Preheat the oven to 180˚c

Sift the flour into a mixing bowl.

Add the sugar, the softened butter, the eggs and the vanilla paste.

Wisk for 5 minutes until well blended.

Spoon into muffin moulds and sprinkle chocolate chips over surface.

Bake in a preheated oven for about 20 minutes or until they are golden.
