Chocolate Mousse

Ingredients:

200 g Dark Chocolate

4 Eggs

2 tbsp olive oil 

2 tsp vanilla extract with seeds

3 tbsp Water

½ cup of Whipped Cream

Method:

Break the chocolate into small pieces and place in a mixing bowl together with the water. Place the bowl over a pan of boiling water.

When chocolate starts to melt add the olive oil and the vanilla extract.

When melted whisk the chocolate into a smooth paste. Whilst still on the heat add the egg yolks one at a time whisking briskly.

Remove from the heat and leave to cool.

Whisk the cream until firm and refrigerate.

When the chocolate mixture is a bit cooler fold in the cream using a whisk.

Whisk the egg whites until they form soft peaks.

Fold the egg whites into the chocolate mixture with a metal spoon.

Pour the mixture into one large serving dish or individual ramekins.

Refrigerate for a minimum of 4 hours before serving.
